A leftover bottle of wine.

Doesn’t everyone already have their own Spaghetti & Meatballs recipe? It’s kinda the American version of India’s curry. Each family’s recipe is just a little different. But just in case, here’s mine.

Funny thing is, I never used to cook with wine, an ingredient in this recipe. But one normal Sunday night, I had decided on Spaghetti & Meatballs for dinner. The previous night, we had entertained and a leftover bottle of red sat next to me on the counter. On a whim, I added a bit to deglaze the pan, and like a steam-roller, I understood all the fuss about wine. Holy smokes… cooking with wine is awesome! It totally makes things taste deep and layered, rich and satisfying. That night, John declared it the best Spaghetti & Meatballs ever, so I took the time to write it down in order to share it with you!

My version, with the addition of our friend vino, has turned upscale, completely suitable for company. It sorta takes effort. I mean, I usually rely on jarred sauce, so that’s easy, and though making meatballs takes a minute, the rest is pretty routine. I tried to be very detailed about the instructions, just so you succeed. And, I promise you; the taste is totally worth it. I’ve made this for two additional dinner parties since the wine discovery, and one friend passionately observed, “This tastes expensive!” Though I feigned offense to his shock, I liked it. And obviously, so did he!

    I love that you added fish sauce to these meatballs. Great idea – a small amount adds so much flavor.
    The wine-yes, I do need to go there in my cooking. It gives a whole new dimension to sauces. Great recipe!
